Let’s make it
Heat half the oil in a skillet
Heat half the oil in a skillet. Brown sausage links 5 minutes, turning.
Build the flavor
Add measured water, cover and cook over medium 8–10 minutes until the centers reach 160°F. Remove to a plate.
Add remaining oil, pepper and onion
Add remaining oil, pepper and onion. Cook 7–9 minutes until softened and browned.
Bring it together
Toast rolls, slice the sausages lengthwise and fill with sausage and peppers.
Finish and serve
Taste and finish with the measured salt and black pepper; use less salt if a prepared sauce is already salty.
Make It Even Better
Steam the links after browning so the casing stays juicy while the center cooks.
Make it your own
Use small baguettes instead of hoagie rolls.
What to serve with it
Assemble just before eating to protect the toasted edges. Serve any cool vegetables on top at the last moment; avoid stacking hot portions where trapped steam softens them.
