  • 1 lb fully cooked smoked sausage, sliced
  • 1½ lb potatoes, cut into ½-inch cubes
  • 1 bell pepper, chopped
  • 1 red onion, chopped
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp black pepper

Let’s make it

  1. Get ready

    Heat the oven to 425°F. Toss potatoes with oil, smoked paprika, garlic powder, and pepper on a large baking sheet.

  2. Build the flavor

    Spread into one layer and roast for 20 minutes.

  3. Bring it together

    Add sausage, bell pepper, and onion and toss carefully.

  4. Finish cooking

    Roast for another 15 minutes, until potatoes are tender and sausage is thoroughly heated according to its package.

  5. Serve and enjoy

    Serve hot, scraping up the browned bits from the tray.
