  • 1 small head cauliflower, small florets
  • 1 15-oz can canned chickpeas, drained
  • 4 flour tortillas, small
  • 1 tsp ground cumin
  • 1/4 cup Greek yogurt
  • 1 lime, juiced
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Let’s make it

  1. Heat oven to 425°F

    Heat oven to 425°F. Toss cauliflower and dried chickpeas with oil and cumin.

  2. Build the flavor

    Roast on a large tray 25–30 minutes, turning once, until cauliflower is tender and golden.

  3. Mix yogurt with lime juice and warm tortillas in a dry pan
