What you’ll need

  • 8 oz mushrooms, finely chopped
  • 1 15-oz can canned black beans, drained
  • 2 sandwich rolls, split
  • 1 eggs, beaten
  • 1/3 cup panko breadcrumbs
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Let’s make it

  1. Prep the ingredients

    Heat half the oil in a skillet and brown mushrooms 8 minutes until their moisture evaporates. Let cool slightly.

  2. Mash black beans, then mix with mushrooms, egg and panko

Use canned kidney beans, cooked and drained, instead of black beans.

What to serve with it

Assemble just before eating to protect the toasted edges. Serve any cool vegetables on top at the last moment; avoid stacking hot portions where trapped steam softens them.
