What you’ll need

  • 1 lb chicken thighs, boneless
  • 12 oz potatoes, cut into 1/2-inch cubes
  • 1 lemon, zested and juiced
  • 1 tsp dried oregano
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Let’s make it

  1. Heat the oven to 425°F

    Heat the oven to 425°F. Toss potatoes with half the oil and spread on a tray; roast 10 minutes.

  2. Build the flavor

    Rub chicken with remaining oil, oregano, lemon zest and half the lemon juice.

  3. Cook it through

    Nestle chicken among the potatoes and roast 20–25 minutes, until chicken reaches 165°F and potatoes are tender.

  4. Rest 3 minutes and finish with the remaining lemon juice

    Taste and finish with the measured salt and black pepper; use less salt if a prepared sauce is already salty.
