- 14 oz firm tofu, drained and cubed
- 3/4 cup rice
- 3 cups broccoli, florets
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp cornstarch
- 1 tbsp olive oil
- 1 1/2 cups water
- 1/4 tsp salt
- 1/8 tsp black pepper

Press tofu between clean towels while rice cooks. Boil rice with measured water, cover and simmer low 15 minutes, then rest 5 minutes.
Pat tofu dry and toss with cornstarch
Pat tofu dry and toss with cornstarch. Heat olive oil in a nonstick skillet and brown tofu on several sides for 10–12 minutes.
Transfer tofu to a plate
Transfer tofu to a plate. Add broccoli and a splash of water to the skillet; cover 4 minutes, then uncover and cook 2 minutes.
Bring it together
Return tofu, toss with soy sauce and sesame oil, and spoon over rice.

Taste and finish with the measured salt and black pepper; use less salt if a prepared sauce is already salty.
